It ferments in stainless steel vats at low temperatures in the centuries-old cellar and is bottled early so as not to lose its aromatic qualities and minerality.
After years of production in mills until the years of occupation, it was relaunched in 1994, as a young but structured white, with citrus notes of lime and lemon that give it a strong personality, full of freshness and youth.
