The grape's profile is evident on the nose, with notes of nuts, peach and butter. The smoked and toasted wood are very discreet, with the fruit always overlapping, the whole is fat, complex, harmonious and very balanced. Athayde wines are complex and designed for the table. It goes well with seafood, grilled fatty fish and grilled white meats and is very suitable for more intense dishes.

Description

Producer | Monte da Raposinha : is a family property located in Montargil, Portalegre, in the north of the Alentejo region. Located 500m downstream of the Montargil dam, Monte da Raposinha has 150 hectares, 15 of which have been converted into vineyards.

As a child, Rosário Ataíde, the current owner, was affectionately nicknamed “Raposinha” by her father, hence the name of the property and some of the wines, not only a tribute to her father but also to the whole family.

With a production of 120,000 bottles per year, the direction of management and oenology is entrusted to João Nuno Ataíde - one of the three children of Rosário Ataíde and her husband Nuno Ataíde – and to the oenologist and his wife Paula Bragança Ataíde .

The main objective being the production of wines of quality and character - capable of representing the unique surrounding terroir and the fresh influence of the dam - the concern with nature and ecosystem are also always present through sustainable and ecologically conscious viticulture.

After harvesting by hand, in the cellar, all the grapes are processed and vinified separately, thus respecting the unique and varietal character of each variety.

Chardonnay with partial aging in barrel.

Manual harvest - 100% Chardonnay
Fermented in vats, aged in used 400L French oak barrels. Available in 0.75L and 1.5L. Without losing elegance, the barrel aging adds structure and complexity to these wines, making them very suitable for more intense dishes.

It goes well with seafood, grilled fatty fish and grilled white meats.
