Sustainable farming, yield is controlled and quality is improved by removing secondary shoots and thinning bunches. After sorting and crushing, the grapes are transported by gravity in small vats and fermented at 27ºC using only indigenous yeasts. Post-fermentation maceration for 15 to 20 days. 50% of the wine is aged in second and third year French oak barrels for 9 months
